He attended Williams College in Williamstown, Massachusetts, and majored in Art and Philosophy. He worked as an artist after graduating, married Mia Galison, President of eeBoo Corp, and had three children, Eyck, Elodie, and Finn. Soon after their last children were born, Saxton Freymann partnered with Joost Elffers to write Play With Your Food, which was published by Elffers.

Saxton Freymann is a New York artist who creates emotional animals completely out of produce. His art career began in painting, until 1997 when he paired up with publisher Joost Elfers. Freymann supplied Joost's need for someone who could carve food beyond the rose radish table garnish . Freymann tried carving animals and discovered his new talent. By using an exacto knife, he turns bananas into octopi, a pear into a bear, or oranges expressing a variety of moods. He uses peppercorns or black-eyed peas for eyes, and beet juice or kernal corn for teeth. His inspiration comes from the produce aisle. He claims each vegetable or fruit already has its own personality.
